Cake Flour Cups to Grams

This calculator uses King Arthur Baking's 120 g per US cup for unbleached cake flour. Check the recipe wording before converting: Sally's Baking lists 118 g per ordinary cake-flour cup but 100 g for a cup of sifted cake flour. Sifted before measuring is not the same as measured first, then sifted. If the recipe already gives grams, weigh those grams.

King Arthur Baking lists 1 cup unbleached cake flour as 120 g. Source note

Bleached cake flour from another brand may use a different cup weight.

Check the sifting instruction before you use the cup chart

The US cup quantity alone cannot tell you which reference applies. “1 cup sifted cake flour” means sift before measuring; “1 cup cake flour, sifted” means measure before sifting. These source-labelled references are not interchangeable product measurements.

The live calculator and eight-row chart below remain fixed at King Arthur's 120 g/cup. For another source, multiply US cups by that source's g/cup or divide grams by its g/cup. Do not switch just because the product label says 'cake flour'.

The recipe and the flour label come before the gram chart

King Arthur Baking's ingredient chart names unbleached cake flour at 120 g per US cup, while Sally's measurement reference lists 118 g for a cup of cake flour. The 2 g difference is between published measurement systems; it does not prove two brands, measuring methods or recipes are interchangeable. If the author provides grams, use those rather than forcing this calculator's chart.

King Arthur's comparison of bleached and unbleached cake flours documents meaningful baking differences beyond mass. Matching the weight of a bleached cake flour to an unbleached product does not ensure identical behavior in a cake. This converter reports weight for its explicitly named flour; it is not a substitution guide.

Sifting before filling the cup is not sifting afterward

When a recipe says '1 cup sifted cake flour', sift first and then measure; '1 cup cake flour, sifted' tells you to measure first. Sally's instructions explain this wording distinction and list 100 g for a cup of sifted cake flour against 118 g for an unsifted cup in her reference.

Do not apply this page's 120 g weight to a cup that was specified as pre-sifted. For a cup to be sifted only after measuring, first take the stated cup with the author's ordinary method and sift that portion. Fill a dry cup gently and level without packing; prioritize recipe-specific gram weights when they exist.

Three-quarter cup: the arithmetic changes with the assumption

At this page's King Arthur reference, ¾ cup × 120 g/cup = 90 g. The same ¾ cup at Sally's ordinary 118 g reference yields 88.5 g; at her pre-sifted 100 g reference, it yields 75 g. These conditional examples are not three simultaneous weights for one undefined cup. Decide the product and measurement instruction before selecting a result.

If you are checking 150 g against Sally's 100 g-per-cup pre-sifted reference, divide 150 g ÷ 100 g/cup = 1½ US cups. The default reverse calculator would give 150 g ÷ 120 g/cup = 1¼ US cups instead; that is the King Arthur convention, not the specified sifted reference. For a recipe that already prints 150 g, weigh 150 g and follow its sifting instruction rather than substituting a different cup standard.
